Strawberry and yogurt plumcake


Strawberry plumcake with yogurt, a delicate, soft and very easy dessert to make without using scales. As a unit of measurement you will only use the 125 g yogurt jar, you will not have to use an electric whisk. This time you will only need a bowl and a whisk, and for the lazy ones a kitchen mixer will also work. A perfect dessert, similar to the 7 jar cake, enjoyed not only for breakfast but also for a healthy snack which, despite being butter-free, will be soft to the bite.
This plumcake is rich in strawberries but you can replace them with any type of fruit, so you can enjoy it at any time of the year, whenever you want. In winter, you can enjoy it in the simple version or with chocolate chips. Our strawberry and yogurt plumcake recipe is a light and genuine dessert, prepared with less fatty ingredients: a few eggs and no butter. The perfect cuddle to start the working day in the best possible way.

RECIPE

Scope Breakfast, Desserts, leavened products
  • 1 jar plain whole yogurt or Greek yogurt
  • 2 jars farina 00 sifted
  • 1 jar potato starch sifted
  • 2 jars Brown sugar
  • 2 whole eggs
  • 1 jar sunflower oil
  • 1 teaspoon (heaped) of baking powder sieved
  • 150 g strawberries
  • grated zest of 1 lemon

It will also serve you

  • sunflower seed oil to taste to grease the mold
  • farina 00 q.b. to flour the mold

To decorate

  • strawberries qb
  • icing sugar to taste

A mano

  • First of all, preheat the oven to 170°C in static mode. It will take just a few minutes to prepare the dough.

  • In a large bowl, combine the liquid ingredients: eggs, yogurt and oil. Mix with a hand whisk.

  • Add the sugar, flour, yeast and grated lemon zest. Mix to make the mixture homogeneous and without lumps.

  • Pour 2/3 of the mixture into a 26×12 cm plumcake mould, oiled and floured.

  • Add the strawberries cut into pieces (previously washed and dried). Distribute them over the entire surface and cover with the remaining dough.

  • Bake in the oven in static mode at 170°C for about 50-60 minutes, until it is well leavened and golden on the surface. Before taking it out of the oven, always do the toothpick test, which must come out clean.

  • Remove the cake from the oven, let it cool and decorate as desired with strawberries and icing sugar.

Nel mixer

  • Place all the ingredients in the mixer, except the strawberries, and mix for about 1 minute until you obtain a creamy mixture.

  • Pour 2/3 of the mixture into a 26×12 cm plumcake mold, oiled and floured, and continue the recipe as described above.
