Venus rice salad with salmon


Venus rice salad is a unique dish, proposed here with salmon and lemon caviar, ideal for livening up warm summer evenings. Black rice has a different taste and greater nutritional richness than white rice, guaranteeing a greater intake of antioxidants, it pairs well with fish and vegetables, it holds up well when cooked and is therefore also perfect for being prepared in large quantities. The unmistakable shape of the grains and the color combination make Venere rice with salmon a curious and original dish. Since it is a wholemeal variety it requires slightly longer cooking times but the time spent will be rewarded: you can keep the rice salad in the fridge for 2 days in an airtight container. We offer you a recipe with Venus rice in a single portion, enriched with a few grains of lemon caviar which, in addition to making the dish more beautiful with its small caviar-like spheres, gives the right acidity to the dish.


  • 250 g Venus rice
  • 100 g smoked salmon
  • juice and zest of ½ lemon
  • arugula qb
  • lemon caviar to taste
  • extra virgin olive oil to taste
  • sale q.b.
  • pepe q.b.
  • Place a pan with plenty of salted water on the heat and boil the rice for 20 minutes or for the time indicated on the package.

  • Once ready, turn off the heat, drain the rice and let it cool.

  • Season it with a drizzle of oil, the juice and zest of the lemon, the salmon cut into pieces and the rocket.

  • Equip yourself with 4 small molds greased with oil, fill with the seasoned rice and press the mixture well with the back of a teaspoon.

  • Cover with cling film and let rest for about 10 minutes, just long enough for the rice to compact well.

  • Once the necessary time has passed, invert the molds onto serving plates and decorate as desired
