As an alternative to courgettes you can serve the cuttlefish egg on sweet and sour onions or a bed of pea cream. Just cook the peas with a little water, salt and a small spring onion. As soon as they are tender, not overcooked, blend them with the blender adding a drizzle of extra virgin olive oil. Be careful when cooking, if it is cooked for too long you will lose the bright green colour.
