  • To make an excellent tomato powder you can use various types of canned tomatoes. To obtain a sweeter flavour, seasonal ones should be used, the ideal period is between July and August. The important thing is that they are properly ripe, healthy, free of dents, mold and not soft.

  • After having washed and destemmed the tomatoes, cut them into pieces and prepare your homemade tomato puree.

  • After having passed and re-passed the tomato through the food mill with narrow holes, use the tomato juice for your sauce and to avoid waste, use the tomato waste by drying it with the method you prefer: in the sun, with the dryer or in the oven.

In the oven

  • Place the tomato waste on a baking tray lined with baking paper, add salt to taste and bake.

  • Bake at 80°C in static mode for about 3-4 hours, until they dry completely, turning them often. If you want to speed up drying, cook in fan mode at 60°C.

  • They will be perfectly dried when, when you touch them with your fingers, you will have the effect of chips in a bag. As soon as they have cooled, chop them finely with a mixer until you obtain a powder.

  • Dry the peels with kitchen paper and place them on a baking tray lined with baking paper, add salt to taste and bake.   • Place it in a tightly closed glass jar, the tomato powder is ready to be used. It can be stored in the pantry for approximately 10-12 months.

Before chopping the peels with the mixer you can flavor your dried tomatoes with dry aromas such as garlic, oregano or capers, according to your tastes.
If your tomatoes contain many seeds, before transferring the powder into the jar, we recommend passing it through a narrow mesh strainer.
