Watermelon granita

One of the most loved summer specialties: granita!
Watermelon granita is a fresh, light and thirst-quenching dessert, ideal for hot summer days, colorful and good for its intense flavour. The preparation is very simple and, unlike ice cream, more thirst-quenching having watermelon and water as ingredients.
It can be prepared in a few steps and in a few minutes, obtaining a perfect result. You just need to remember to mix from time to time until you get the perfect consistency and graininess.
The amount of sugar to use in watermelon granita can vary and depends on the sweetness of your fruit and your habit of sugary flavours.
To cool off during hot days you don't need to look for the nearest ice cream shop, you can make it at home. Watermelon granita is perfect as a snack, break, dessert or after dinner, in Sicily it is also enjoyed for breakfast. Excellent on its own, with chocolate chips, with cream or in the classic brioche with tuppo.

Scope Breakfast, Desserts
  • 800 g watermelon pulp
  • 300 g sugar
  • 300 ml water
  • First of all, prepare the syrup by dissolving the sugar together with the water in a saucepan and stir until it is completely dissolved. Let it simmer over low heat for a couple of minutes.

  • Turn off the heat and let it cool.

  • Meanwhile, cut the watermelon into slices, remove the peel and seeds.

  • Cut it into pieces and, with the help of a centrifuge or an immersion blender, extract the watermelon juice.

  • With the help of a narrow mesh strainer, filter the juice and pour it together with the cold sugar syrup. Mix and amalgamate everything.

  • Pour the mixture into a suitable container and place it in the freezer for a few hours. Remember to mix frequently, about every 40 minutes with the help of a fork or better yet with an immersion blender. This way you will obtain a creamy mixture and avoid the formation of a single frozen block. The watermelon granita is ready to be served when it reaches a grainy consistency.

  • Serve your watermelon granita in transparent ice or glass cups, decorate with a slice of watermelon and accompany it with the Sicilian brioche with tuppo.
The quantities of sugar can be reduced according to the sweetness of the watermelon or according to your tastes. If the watermelon is very sweet, for example, you can reduce the amount of sugar to 35-40 g.
If, however, you want to tone down the too sweet flavor of the watermelon, you can add the juice of half a lemon.
