Baked carrots are perfect to serve when you have little time available or as a side dish to accompany meat, fish and cheese. A quick and easy recipe to prepare in any season: you can decide to leave them whole, cut them into sticks or pieces, the important thing is that they are fresh carrots with foliage, juicy and crunchy at the right level. Ideal for those who follow a low-calorie diet or for those who love vegetarian dishes. Cooking them is very easy, they are prepared like baked potatoes, just flavor them with aromatic herbs of your choice. If you want to give an extra touch by enhancing their sweet flavour, do as we do: add organic Millefiori honey, strictly Sicilian and of the highest quality produced by the APIS company. You will get carrots rich in flavor and truly delicious, a dish with a special flavor that is also appreciated by children. Cooking carrots in the oven is quite simple: as far as cooking with honey is concerned, they do not need excessively high temperatures, as they must maintain their balanced flavor and full-bodied consistency after cooking. RECIPE

Kitchen Italian, Mediterranean
  • 10 fresh medium carrots with foliage
  • 2 spoons organic honey APIS Millefiori
  • 3 spoons organic extra virgin olive oil Lo Castro
  • poached garlic to taste
  • chili pepper to taste
  • timo q.b.
  • salvia q.b.
  • rosemary to taste
  • roast flavorings to taste
  • pepe q.b.
  • Cut the top of the carrots, peel them, wash them and arrange them in a baking dish next to each other.

  • Season with oil, roast herbs, pepper, garlic, chilli, thyme, sage and rosemary.

  • Finally add the honey, mix with your hands to ensure that the ingredients blend and the carrots absorb the seasonings.

  • Space the carrots so they don't overlap. This step is useful to ensure even cooking.

  • At this point you can bake at 200°C in fan mode on the middle shelf for about 40 minutes, the minimum time it takes for our carrots to soften inside. Turn them every now and then to create that beautiful shiny external and slightly blackened patina.

  • When they are cooked, take them out of the oven and serve.

The cooking times depend on the size of the carrot pieces you have made, but generally it never goes above 60 minutes.
