Jarred cherry tomatoes


It's the time to make lots of preserves! A few steps to have a good supply during the winter of natural cherry tomatoes in jars under glass, the easiest and fastest homemade tomato preserve there is. Convenient to keep in the pantry and decidedly genuine, all you need to do is store the whole cherry tomatoes in sterilized jars. Prepared in this way, they will remain intact and, when you use them, you will appreciate their taste and freshness. Jarred cherry tomatoes can be used as a flavoring for your pasta sauces, to complete a second course, to season a pizza or simply eaten without cooking, seasoned with oil and salt on a slice of bread. Try them too, so in winter you will appreciate the unmistakable taste of tomatoes that recalls summer.

RECIPE

  • 2 kg cherry tomatoes
  • 1 bunch fresh basil optional
  • First of all, get some glass jars with lids that you have sterilized.

  • Take the tomatoes, choose only the entirely healthy ones, remove the stem, wash them in cold running water and dry them. If you use basil, wash it too.

  • Make a small cut on the tomatoes and place them inside the jars. Press lightly with your fingers so as to lower them and make the most of the volume of the jar, otherwise, after vacuum cooking, the jars will seem half empty.

  • Fill the jars up to the neck. If you prefer, also add some fresh basil leaves, alternating them with the tomato. Then close the jars.

  • Prepare a large pot. On the bottom, lay some tea towels to isolate the direct heat. Inside, place the jars and cover them completely with cold water. Add more tea towels between the jars, so you don't have any bumps while boiling.

  • Bring to the boil. From the moment it comes to the boil, lower the heat to minimum and continue boiling for about 40 minutes.

  • Turn off and let them cool in water, preferably overnight. Take out the jars and store them in the pantry in a cool, dark place, not exposed to direct light. They will keep for at least 1 year.

The type of tomato you use is of no importance, but the choice of good tomatoes during the summer season is essential: juicy, beautiful, firm, healthy, and sweet.
During cooking, the cherry tomatoes will release some water and some seeds, so finding some in the jar is normal and is not a sign of poor preparation.
