These apple pancakes were a little discovery. They are prepared egg-free, dairy-free and sugar-freeand yet, despite all these “withouts”, they are absolutely gratifying.
It was she who made me discover them Cool Gif, experimenter of recipes that “I like, it's good for me”, the first source I draw on when I'm looking for something healthy but, at the same time, tasty. Federica has the ability to find particular combinations and revolutionize some basic recipes, transforming them into something completely new and good. She has, a bit like me, a breakfast obsession and it's not the first time I've replicated one his morning recipe.

I tried them on Saturday morning, making half a dose, and on Sunday I immediately made them again to immortalize them and publish them here, so simple and healthy, I said to myself, they absolutely should be shared. They are very easy to make, all you need is an immersion blender to make the batter and you're done. With the doses indicated I prepared two rather large ones, enough for as many people.

In these latest recipes, among the “prop” objects that help me show the finished dish, I used the porcelain of a friend, known through work, who decided to dedicate herself completely to her passion. Apples pancakes

100 g of organic apple
80 g of type 1 flour
20 g of wholemeal rye flour
1/3 teaspoon cinnamon
1 pinch of bicarbonate
1 pinch of vanilla powder
150 g of rice milk
1 pinch of organic lemon zest
1 teaspoon lemon juice

To fill:
4 tablespoons frozen blueberries
1 organic apple slice
dried fruit to taste
hazelnut cream and carob to taste

(For two pancakes) Peel and cut the apple into small pieces, put it in an immersion blender together with all the ingredients. Operate the blender until you obtain a velvety and smooth cream. Heat a non-stick pan and lightly grease it. Pour the batter in spoonfuls to form two large pancakes, cover with a lid and cook until the classic bubbles form, turn with a spatula and continue until golden.

Cook the blueberries in the pan for a few minutes. Fill the pancakes with the sautéed blueberries and the other ingredients according to your taste.
