Bites with Parmigiano Reggiano

What can I do if friends meet at my house at the last minute to go out for dinner?
Do you want to not offer him a glass of wine or a gin and tonic?
And you can't just accompany it with a pack of chips and two olives, after all you've been boasting the title of FOOD BLOGGER for nine years. What the hell!
These morsels with Parmigiano Reggiano they are perfect for us who have to keep our reputation high and demonstrate that we can get by in just under an hour with the “smart” ideas that today seem to be the true trademark of the blogger. Among these pages of clever ideas you will find some, I certainly cannot boast of owning this medal. On homemade pie there are more recipes from the Romagna tradition, inspirations taken from French cuisine or simple recipes that I wouldn't define as clever.

If you're wondering, no one has invited themselves to my house but, never say never, it could happen and it's better to be prepared.
To the recipe Crusted olives I therefore add this proposal as an arrow to mine miserable crafty bow. Few ingredients, 15 minutes in the oven and these little cheese sandwiches that smell of rosemary will be between your fingers. And one after another they will end in no time!

Bites with Parmigiano Reggiano

80 g of spelled flour
2 eggs
200 g of Greek yogurt
120 g of grated Parmigiano Reggiano (I aged 24 months)
2 teaspoons of baking powder
rosemary to taste
sesame seeds to taste
pepe q.b.

In a bowl, lightly beat the eggs, add the yogurt, sifted flour, yeast, Parmesan and a little pepper. Work with a spoon, if the dough is too hard add a little milk (little at a time).
Using 2 spoons, make small balls of dough a little larger than a walnut and distribute them on a baking tray lined with baking paper. Sprinkle each morsel with chopped rosemary and sesame seeds.
Bake at 200°C for 15 minutes or until golden brown. Serve immediately, if desired accompanied by fresh cheese such as squacquerone.
