Cooked and raw salad with feta

In summer it is one of the dishes I prepare most often, rich salads, we call them that at home. Not simple mixed salads made up only of vegetables but something that becomes a single, tasty dish that allows us to turn on the stove as little as possible. Even though this summer is decidedly anomalous from a weather point of view, my tolerance towards the heat has certainly decreased after last season. In addition to this, the time and desire to be in the kitchen is also scarce and, if it weren't for special occasions and people, I would say that the kitchen is closed for holidays this year 🙂

Preparing this salad takes about half an hour and, together with a couple of slices of bread, it is truly a unique and healthy dish. I called her cooked and raw salad because of the cherry tomatoes I sautéed in the panwhich I added once cooled to the rest of the salad.
I know that many people don't like peppers and if that were the case you could replace it with a cucumber which I don't really like and which probably would have been fine. The presence of freshly scalded cherry tomatoes makes this dish a little different and gives a soft and melting consistency to everything. Be careful with the salt at the end, the presence of feta could be enough to flavor everything.
This recipe is a base for other salads: instead of feta there could be eggs or cooked ham, to further flavor capers or olives. Have fun combining everything as you like, it will surely be a small success!

Cooked and raw salad with feta

for 3/4 people
1 red onion
500 g of red and yellow cherry tomatoes
extra virgin olive oil
black pepper to taste
sugar to taste
300 g of mixed chopped salad
1 red pepper
400 g are exceeded
dried oregano to taste

Peel the onion, cut it into slices and soak them in a bowl full of cold water.
Wash and cut the cherry tomatoes in half. Heat a drizzle of oil in a pan, add the cherry tomatoes, salt, pepper and add a little sugar. Sauté the tomatoes for 5 minutes over high heat, turn off and set aside.
Wash the salad and dry it. Wash the pepper and cut it into strips.
Crumble the feta and season it with a little oil and plenty of oregano.
In a salad bowl, combine the lettuce, the pepper, the onion drained of the water, the sautéed tomatoes, the sprouts and the feta. Season with oil, salt and pepper and serve.
