Before Christmas I gave myself a gift. I ordered the books of two friends and bloggers who I am fond of and admire very much. One of these two is Marianna of the Menta e licorice blog and his book “From flour to flour” has been on my bedside table since it arrived, keeping me company, full of colored tabs: pink to do now!yellow to do and not forget. This is the first of the recipes that I decided to prepare during the holidays. The book is really beautiful, the photographs are warm and, as already happened when looking at the blog, they have the ability to make you perceive the flavor of the dish and make you want to prepare it. With the exception of the flours (some less easy to find than others) the list of ingredients is that of a home pantry, so at any time you could get to the stove and start kneading and baking. And if only I could (there are two of us in the house, not a hundred!) I would have already redone half of Marianna's proposals during the past holidays 🙂

These muffins are part of the chapter “spelled flour” and they immediately convinced me because they were very quick to make and because of the walnuts which, together with the almonds, have become my snack companions between one meal and another. Maple syrup has entered the house since I started making chanterelles and pancakes and, in fact, it had been sitting in the pantry for a while…

As Marianna says, they are also perfect for a snack for the little ones at home and in less than an hour you can offer those you care about a healthy and delicious treat. I prepared them for breakfast and I leave you the recipe to encourage you to prepare them at the weekend, I made some changes dictated by the pantry above. Voila!

Muffins with walnuts and maple syrup

  • 200 g of semi-wholemeal spelled flour (normal for Marianna)
  • 50 g at night
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • sale q.b.
  • 2 eggs
  • 50 g of maple syrup
  • 100 g of cane sugar
  • 60 g of extra virgin olive oil (sunflower oil for Marianna)
  • 120 g of soy yogurt (white for Marianna)

(For 8 muffins) Turn the oven on to 200°. In a bowl mix all the sifted dry ingredients: flour, baking powder, bicarbonate of soda and a pinch of salt. Chop the walnuts quite finely and add them to the flours. In a second bowl, mix the eggs with the sugar, maple syrup, oil and yogurt with a hand whisk so that the sugar dissolves. Pour the mix of liquids into the flour bowl, mix quickly to obtain a homogeneous but lumpy mixture (remember that the less you work it, the softer it will be).

Distribute the mixture into the baking cups and bake for 20 minutes, until the muffins are puffy and golden. Remove from the oven and leave to cool on a wire rack before eating.
