Pancake – porridge?! | Homemade pie


Spring always catches me a little unprepared, not only because the swimsuit rehearsal is approaching and the sun and I haven't loved each other so much in recent years, but also because I'm suddenly catapulted into the world of first fruits which are starting to color the stalls of markets and supermarkets. And so I find myself fighting between the very strong temptation to buy all those colorful fruits and the need to wait for dad's garden to start bearing fruit.

And every now and then I fall into temptation, like this time with the strawberries. I ate them a little plain and, I confess, they weren't very sugary and I used them a little to prepare this recipe that “I like and that's good for me”. Does it remind you of anyone? 🙂
This recipe is just from Federica Giffood blogger from Rimini and friend, even if in reality there are always very few opportunities to see each other and my confidentiality and the fear of annoying people do the rest… However, Fede is a top blogger, his healthy recipes they always look appetizing and, seeing as I had the opportunity to taste something of his a few years ago (my goodness, how long!) I can allow myself to say that they are also very good and even the most boring people like them…

I immediately loved this recipe double robe: the ingredients of a porridge with dried fruit, milk and seeds and the appearance and cooking technique of pancakes.
I made some changes compared to the original that Fede shared on his blog. There certainly isn't that spoonful of sugar which, I really hope, will forgive me but with the strawberries being so not very sweet I felt it was necessary (that's why every time I promise myself not to fall into temptation!). I also eliminated the yogurt, which I didn't have in the pantry and replaced it with a little more milk. Furthermore, I chose not to blend the mixture to make it silky and fluid like pancake dough as suggested by Federica but to leave it natural. The pancakes came out the same, less beautiful than hers but equally good.

A recipe that takes half an hour to put on the table for a king's breakfast (and a very vegan one!) and since next weekend will be a little longer than usual you will certainly find the time to prepare them.

Pancakes with strawberries

50 g of sultanas
30 g of small oat flakes
50 g of whole wheat flour
1 teaspoon baking powder
1/4 teaspoon turmeric
1 teaspoon chia seeds
lemon zest to taste
1 pinch of Cervia salt
120 g of oat milk
1 tablespoon extra virgin olive oil
1 basket of strawberries
1 tablespoon of sugar
cocco rapè q.b.

(For 2 people) Place the raisins to soak in a bowl with warm water.
Combine the oat flakes, flour, yeast, turmeric, seeds, lemon zest and salt in a bowl. Mix well and then add the milk and oil. Drain the raisins and add them to the mixture. Let it rest for 5/10 minutes.
In the meantime, prepare the strawberries by washing them and cutting them into medium-small segments. Throw them into a pan together with a spoonful of granulated sugar and cook them over high heat for a few minutes, just long enough for the sugar to caramelize a little. Keep aside.
Grease a thick-bottomed pan and start forming pancakes, 6 small ones will come out. Serve them together with strawberries and a sprinkling of rapé coconut.
