I'll get straight to the point: these courgette pancakes I'm the bomb! Delicious on their own, perfect with the stracciatella-based sauce which makes them even more delicious. I add that they are also easy to prepare and fast, if we do not consider the resting time to allow the courgettes to eliminate the vegetation water.

Although I must confess that my husband and I ate them for dinner, pancakes are perfect for an aperitif with friendsto be placed in the center of the table while waiting for dinner or together with other equally delicious proposals.

Courgette pancakes with stracciatella sauce

500 g of courgettes
1 bunch of aromatic herbs (parsley, basil, marjoram, thyme)
1/2 spring onion
2 eggs
100 g of 00 flour
50 g of Parmigiano Reggiano
600 ml of sunflower oil
Flaked salt

For the sauce:
200 g of stracciatella
1 teaspoon chopped aromatic herbs

(for 15/16 pancakes) Wash and grate the courgettes. Take a colander or strainer, arrange the grated courgettes, salt them lightly and let them drain for 30 minutes.

Chop the aromatic herbs and spring onion. Prepare the sauce by mixing the ingredients with a spoon. Keep aside.

In a bowl combine the flour, eggs and chopped aromatic herbs. Knead the dough with a whisk (it will be quite sticky but do not add liquids). Squeeze the grated courgettes with your hands and add them to the mixture together with the parmesan cheese. Work with a spoon until you obtain a uniform dough.

Heat the oil and fry the batter, each pancake is about a tablespoon. Drain the pancakes on absorbent paper, add salt and serve immediately accompanied by the stracciatella sauce.
