What to eat if you suffer from celiac disease

In the celiac disease diet, foods belonging to the various product classes are divided into 3 lists:

Among the “at risk” foods, some products are indicated which may be gluten-free, therefore suitable for celiacs, but which may also have an unknown botanical origin or be “at risk of contamination in the various stages of production”. In this regard, we recommend the HANDBOOK OF GLUTEN-FREE COMMERCIAL PRODUCTS drawn up by the Italian Celiac Association. This handbook indicates the food products guaranteed by gluten-free manufacturing companies.
